Spicy Sausage Pasta

Ingredients

1 tablespoon of Butter (Or oil)

1 large, roughly chopped Red Onion

1 roughly chopped Red Pepper

6 sliced Pork Sausages (caramelised onion sausages are always a hit)

1 teaspoon of Chilli Flakes (Adjust depending on how spicy you like it)

50 millilitres of White Wine

300 grams of Passata (or chopped tomatos)

2 teaspoons of Italian Herbs

1 cube of Vegetable Stock

150 grams of Pasta

2 handfuls of Spinach

Grated Cheddar Cheese (for topping)

Method

Heat the oil in a large pan on medium heat, and add the red onion and pepper. Cook until soft (about 10 mins).

Add the sausages and chilli flakes and cook for a few minutes until browned. Turn up the heat to high and deglaze the pan with the wine and cook for a minute or two.

Add the passata, herbs and stock (with a bit of water if needed) with a generous amount of salt and pepper. Bring to the boil and then simmer on low for about 15-20 minutes.

While the sauce is simmering, cook the pasta according to packet instructions. Taste the sauce and add seasoning/herbs if necessary. If too spicy add some grated cheese or tomato puree.

Once the pasta is cooked drain and set aside. Then add spinach to the sauce to wilt.

Once wilted add the pasta to the sauce and stir to combine. Serve with grated cheese on top.

Notes

If batch cooking feel free to separate the extra and set aside to put in the fridge/freezer.
