Simple rich Italian sauce, ideal with plain pasta or a cheesy ravioli.

1 tablespoon of Butter
1 large, finely chopped Red Onion
1 glug of Red Wine
2 teaspoons of Italian Herbs
1 tin of Chopped Tomatoes

Add the butter to a saucepan on medium high heat. Once melted add the onion and fry for around 10 minutes until golden.

Add the wine and herbs and cook for about 3 minutes on high heat until most of the alcohol is cooked off.

Add the chopped tomatoes, season generously with salt and pepper, and simmer on a low eat from anywhere between 20 minutes and an hour.

Stir into plain cooked pasta or a cheesy ravioli.
