Slow Cooker Beef Stew

Ingredients

800 grams of diced Beef

2 tablespoons of Plain Flour (seasoned with salt and pepper)

1 tablespoon of Oil (or butter for extra richness)

1 glug of Red Wine

8 halved, small Potatoes

4 large, thickly sliced Carrots

2 Red Onions (halved and cut into wedges)

1 Red Pepper (sliced into thick strips)

1 Yellow Pepper (sliced into thick strips)

200 grams of thickly sliced Celery

3 teaspoons of Mixed Herbs (Herbs de province are also really nice)

400 grams of Passata

1 cube of Beef Stock

Method

Coat the beef with the seasoned flour and heat the oil in a frying pan on a medium heat. When hot add the beef and brown, in batches if necessary.

Deglaze the pan with the red wine scrapping up any brown bits from the bottom (thats where the flavour is). Once deglazed add the beef and any remaining wine into the slow cooker.

Chuck in the rest of the ingredients, add a bit of salt and pepper and stir to combine everything. Cook on low for 7 hours.

An hour or two before the end taste for seasoning and add any extra herbs, wine or tomato puree if needed.

Notes

My slow cooker has a fry setting so you can use that instead of a frying pan if your cooker has the same function.
