A simple, delicious, slow cooked family favourite. Really low in fat and packed full of veg!
800 grams of boneless Chicken Thighs
8 halved, small Potatoes
4 large, thickly sliced Carrots
2 Red Onions (Halved and then cut into wedges)
1 Red Pepper (sliced into thick strips)
1 Yellow Pepper (sliced into thick strips)
200 grams of thickly sliced Celery
1 glug of White Wine
3 teaspoons of Mixed Herbs (Herbs de province are also really nice)
400 grams of Passata
1 cube of Chicken Stock
Get all the ingredients prepared and chuck everything in a slow cooker. Season generously with salt and pepper and stir so everything is mixed up. Cook on high for about 5 hours or low for 7.
Stir every hour and taste with an hour or two to go. You can add any extra wine, mixed herbs, salt, pepper or some tomato puree for preference.
Serve and enjoy!
You can also chuck in any other veg that you like and adjust measurements to taste as well.
