Asian Sea Bass with Stir Fry Veg

Ingredients

150 grams of Rice

4 teaspoons of Oil

1 chopped Red Onion (or spring onions if you prefer)

2 cm of finely chopped Ginger

1 handful of Broccoli

0.5 teaspoons of Chilli Flakes

1 chopped Green Pepper (or red/yellow pepper)

3 tablespoons of Soy Sauce

1 large handful of frozen Peas

4 Sea Bass (use 2 fillets if they are large)

Method

Make sure to prepare all the veg before to make cooking easier. Then cook the rice according to packet instructions.

Add half the sesame oil to a large non stick frying on a medium high heat. Once hot, add the onion, ginger, broccoli, chilli flakes and pepper and cook for about 4 minutes. Then add the soy sauce and cook for another 2 minutes. Add the peas and cook for a final 2 minutes.

Transfer the stir fried veg to a bowl and add the other half of the oil to the pan. Turn the heat up to max and generously season both sides of the sea bass fillets with salt and pepper.

Once the pan is super hot add 2 (or all four if you pan is big enough) of the sea bass fillets skin side down and cook for 2 minutes. Then flip and cook for another minute. Flip again back onto to the skin. Poke the fish with a knife and if it goes in without any resistance then it is cooked. (THIS CAN GET A BIT SMOKEY SO OPEN A WINDOW AND PUT THE EXTRACTOR FAN ON)

Dish up the rice and veg and place the sea bass on top. Enjoy!
